FMIOTW: Chioggia beets

I’m a beet eater. Love them, although I’ve only tried the red and golden variety. At the farmers’ market today, I was introduced to a Chioggia beet, labeled ‘chioga’ at the stand. Once the farmer explained that they had red/white rings on the inside, I was sold. How fun?!

I roasted slices of the beets in the oven and wilted the beet greens to create a hot salad. The beets were slightly sweet and meaty while the beet greens left me yearning for wilted spinach instead. I am thrilled at the idea of a beet on beet salad, but I think I’ll only buy the beet heads if available.
