plum chutney

From reading the frugalfeeding blog (see blog links), I was inspired to make a simple plum chutney. In a sautee pan, I cooked some plum chunks and added raspberry champagne vinegar, sugar, fall spices and thyme. After 20 minutes, I used my immersion blender to puree the mix and put it over sharp Irish cheddar cheese. Very tasty!

Tart and sweet, great contrast
