What to do with all this spinach!, palak paneer

I had a huge bag of adult spinach from Nichol’s Farm that was growing older as the week steamed ahead. Possibly one of the best uses for a lot of spinach is the Indian spinach and paneer (cheese) dish, palak paneer or saag paneer. I had potatoes from the market and leftover polenta so I substituted those for the cheese. I love the paneer but making it at home takes some advanced planning.
